Campfire S’more Cookies

The family battled with S’mores over the fire pit in our backyard last night. It was snowy and cold, we thought it would be a nice harbinger of warmer weather and camping…

But as I spent the afternoon washing the now-hardened marshmallow out of our sweatshirts and Zoe’s hair, I pondered perhaps an easier version. A tasty, lovely cookie that could act as our promise of summer and more campfires. Have a look…

Campfire S’more Cookies

1 cup butter

1 cup brown sugar

Cream together butter and sugar until fully mixed

Add in: 2 eggs

2 teaspoons vanilla

Beat thoroughly

Add in: 2 cups flour

½ teaspoon salt

1 teaspoon baking soda

1 cup chocolate chips, or one giant Hershey’s bar, chopped

1 cup mini marshmallows (I gently fold in the chocolate and marshmallows)

Here’s the part that makes these cookies epic: baking the cookie on top of a whole graham cracker.


Bake at F350°, for no more than 11 minutes (after 11 minutes, the graham cracker will burn). Remove the cracker from your cookie sheet and quickly transfer to a wire rack. Yields 4 dozen
